We are several weeks into the low carb/Paleo eating regime. Mr ERH is hovering around 100 carbs/day. I started at 50 and thought it might be more effective if I dropped down to 20 ( extremely low carb) and tried to really kick start the increased metabolic rate. This increase comes from forcing the body to burn fat rather than sugar by eliminating most/all of the sugar consumed. Although being a fat burner is a good thing: insulin regulation, lowered blood pressure, lowered cholesterol, the very low carb approach is really hard and not really necessary. You will still turn into a fat burner by reducing carbs to 100-150 daily but it will take bit longer. There are several side effects of extremely low carb: brain fog, constipation, low carb flu, fatigue and more. I can personally say that the low carb flu is a very real thing and though short-lived, not really pleasant.
Suffice to say, I would recommend the route Mr EHR is taking: 100-150 grams of carbs/daily.
Back to the recipe:
Ingredients:
- 2-3 5-7inch zucchinis, spiralized
- 12-15 shrimp, peeled and deveined
- 1 large handful of spinach
- 2 oz goat cheese (optional)
- 2 cloves garlic ( minced)
- 2 TBS salt
- 2 TBS olive oil
Instructions:
Heat 1 TBS of olive oil on medium heat in a large frying pan. When oil is hot add minced garlic. Let garlic cook 1 minute. Add shrimp and cook until most all of the liquid is gone. Remove shrimp from pan and set aside. Add the remaining TBS of olive oil to pan. Add the spinach. When the spinach is wilted add the zucchini noodles and shrimp and heat through. Salt to taste. If goat cheese in acceptable in your diet add now while still heating on stove so cheese get melty. Plate and serve.
