I believe, really believe, in low carb/paleo eating. I believe that eating this way can be almost magical. It can help to lower blood pressure, lower cholesterol, reduce inflammation and don’t forget weight loss and muscle sparing. After reading that you might wonder why I am on my soapbox again.
My husband went to the doctor and tests gave him some numbers he didn’t like. They weren’t really bad, but they weren’t really good either. Now I have to give you a bit of background…I am only an occasional paleo cheater, but Mr ERH is a regular cheater and not really on board with paleo/low carb eating. I have been working on him for years, but no dice..he wasn’t convinced. And then the numbers, those darn numbers, those not great numbers….and then a miracle happened….Mr ERH asked me if I could help him with is diet.
So we embarked on a no cheating,paleo/low carb eating plan, and Mr ERH actually likes it!!!
I thought it might be fun to share the meals we’ve been eating and whether or not they got a thumbs up from Mr ERH.
Brussels Sprouts Bacon and Eggs
- 15 brussels sprouts – washed and halved
- 6 slices of bacon – cut into 1/2 inch pieces
- 4 eggs
- RawMilk Cheddar Cheese – omit if paleo
- 1 TBS grass fed butter
Preheat oven to 350 degrees. Place brussels sprouts facedown on cookie sheet lined with foil or parchment paper. Sprinkle bacon pieces every over spouts. Salt and pepper. Bake for 45-55 minutes. Remove from oven.
Heat a frying pan and add 1TBS butter. Break eggs into pan and cook to desired doneness.
Put sprouts in bowl and eggs on top. If using the cheer sprinkle a bit over the eggs.
Enjoy. This dish got a double thumbs up from Mr EHR ( and he doesn’t really like brussels sprouts ).
