I love breakfast.
I mean I love, love,love breakfast.
I love it in the morning, in the afternoon and in the evening.
I am always looking for a new and delicious ways to make breakfasts. I have been on a spinach kick so there is always spinach in the house.

I thought it might be a good addition to scrambled eggs. I already had some bacon cooking in the oven. Spinach and bacon hmmmmm………… makes me think of spinach salad. A peek in the fridge and I found some onions and some mushrooms and some feta cheese, can you believe it.
And the spinach salad for breakfast was born.

Ingredients
- 4 pasture raised eggs, whisked in bowl with salt and pepper
- 2 giant handfuls of washed baby spinach
- 2 TBS finely diced onion
- 2-3 large roughly chopped mushrooms
- 1-2 TBS olive oil
- Feta Cheese ( optional)
- Heat oil in saute pan. Add the onions and mushrooms and sauce for 2 minutes on medium heat. Add the spinach and continue cooking until wilted. Add the whisked eggs and cook until no longer liquid.
Remove from pan and plate. Add feta cheese and serve with a couple of slices of organic bacon!! Enjoy!!! xo Susan
