If you are like me your mornings are CRAZY. I get up, do a few chores, try really hard to get a workout in, walk the dog, shower, get dressed and get out the door on time.
Oh no!! I totally skipped breakfast and I am half way to work and I am starving!!!! If only I had made more of those wonderful paleo breakfast muffins. They are so simple and pretty darn delicious. Here is the recipe. I hope you enjoy them as much as I do. I have seen them make with bacon, but I think that sausage rocks.
Ingredients:
- I pound organic sausage, cooked ( I use hot Italian sausage)
- 12 pasture raised eggs
Preheat oven to 350.
Line a regular sized muffin pan (12 muffins) with cupcake/muffin papers. Put a spoonful of the cooked sausage into each cupcake paper. Crack an egg into each cupcake paper on top of the sausage. Sprinkle with salt and pepper and basil. Please in the preheated oven for 25 minutes. After 25 minutes check to see if the eggs are cooked, if not quite done cook another couple of minutes.
When the are finished let them cool and store in a covered container. They will keep about a week in the fridge.
Grab as you go out the door.
They are equally delicious cold or reheated. xoSusan
