Chicken Salad always reminds me of powdered ladies who lunch. I had heard of it, but never tried it. I went to a thank you luncheon for some volunteer work I had done and Chicken Salad was served. It was DEEEEEEEELICIOUS!!!! I mean crazy good. I couldn’t believe I had been missing this wonderful manna all of my life. Since that time I have made Chicken Salad many times. As my diet evolved this was one of the dishes that I make to make better and Paleo compliant. Well, here it is. Everyone I make it for requests the recipe. I really hope you enjoy this easy and paleo version of an old favorite.
Ingredients:
2-3 organic chicken breast, oven baked until goledn
1/4-1/2 diced purple onion
3 ribs of celery, chopped
20 red seedless grapes, cut in half
handful of chopped walnuts ( optional)
1 tablespoon dried tarragon
1/2-1 c Paleo mayonaise
Salt and Pepper to taste
After the baked chicken has cooled enough to handle use 2 forks to shred it and place in large mixing bowl. Add all the remaining ingredients and mix well.
Taste to see if you need to adjust spices. That’s it. Can you believe how simple this is. Serve on a bed of lettuce and it is a complete meal. Enjoy. xoxo
