Breakfast is my favorite meal. Sometimes Paleo breakfasts are just another day with bacon and eggs. An easy answer to just another day with bacon and eggs ( which I really do totally loooooove) is the fritatta.
Ingredients
4 pasture raised eggs, beaten
3 TBS diced onion
3-4 sliced mushrooms
Chopped chives ( garnish)
1 1/2 TBS olive oil
Start by preheating the oven to 350 degrees. Place the desired number of bacon slices on a foil-lined cookie sheet. When the oven comes up to temperature put bacon in the oven and set the timer for 10 minutes. As the bacon cooks heat the oil in an oven proof frying pan. Saute onions and mushrooms in the oil ( 6-7 minutes). Add the beaten eggs and remove from heat. The oven timer should be going off just about now. Open the oven and place the pan with the egg mix inside. Close oven door and reset timer for 7-9 minutes.
Everything should finish cooking at the same time, but do check the eggs before the timer rings if you think they might cook a bit more quickly. Chop the bacon into small pieces. Cut the fritatta into quarters top with the chopped bacon and chives. If you are able to tolerate some goat cheese sprinkle a bit on top. Ummm, Ummm good
