Have you noticed the slight nip in the air, the dry and yellowed leaves more and more prevalent on the ground. This means fall in on the way, my favorite time of year. The changing colors, the golden light in the morning, pumpkins and of course a heartier fare. Chili is always a big seller at my house. It is easy and quick and really tasty. We like to serv
e ours with the salad on top of the bowl of chili. I know it sounds funny, but it really tastes good.
Chili Con Carne
Ingredients
1 lb ground buffalo
1 onion, diced
2 cloves garlic, diced
1-2 roasted hatch’s green chiles, diced or 1 can diced green chiles medium
2 TBS chili powder
2TBS ground cumin
1/2-1 tsp smoky paprika
1 large can (28 oz) organic chunky tomato sauce
1 TBS olive oil
Salt and Pepper
In large pan ( dutch oven) heat oil and add onion and garlic, when onion is translucent add the ground buffalo. Cook the buffalo through and let it brown. Add the chili peppers and heat through letting the flavors marry with the onions and garlic. Add the tomato sauce and spices. Heat slowly and let simmer for 15 to 30 minutes. Salt and pepper to taste.
To serve ladle the chili into bowl and top with chopped lettuce, tomato and avocado.
