Sunday dinners are family dinners at my house. When my sons were younger attendance at Sunday dinner was mandatory, no excuses were accepted. Grandma and Grandpa were usually here. It was a great big family affair. These days the kids are grown and those dinners are fewer, but when they happen they make my heart sing. The following recipe is one that was a favorite for those dinners.
Ingredients:2lbs tuna steaks,cooked on grill to desired doneness
1 english cucumber, spiralized into noodles
1lb chorizo sausage (I get mine at Whole Foods)
1/2 small purple onion, diced
1-2 cloves garlic, diced
1 tsp coconut oil or olive oil
I small can organic tomato sauce
1/2-1 tsp sweet paprika
salt and pepper
to make the sauce:
Heat oil in sauce pan until liquid. On medium heat add onion and saute for about 1 min, add garlic and saute for another minute. Remove from pan and set aside. Add the chorizo sausage and cook thorough. When suasage is cooked return the onion and garlic to the pan. Add the tomato sauce and paprika. Salt and pepper to taste. Heat sauce through.
To serve place cucumber noodles on the plate, place the tuna steak on top of the noodles. Top with the Tomato-Chorizo sauce and enjoy!! xoxo
