I know how hard it is to put healthy, tasty, fast meals on the table. This recipe uses shrimp and scallops (you can use only shrimp or only scallops if you choose) and you don’t even have to defrost them. When you are shopping buy frozen shrimp that are peeled and raw.
This recipe is so easy to put together. Start by sauteing onions and garlic in coconut oil. Once they become translucent add the frozen shrimp and scallop combo.Open the can of artichoke hearts and pour out the water, add more water and pour out, one more time add more water and pour out. Now add the artichokes to the pan. Add the broth or wine and simmer for 10 minutes.
At the last moment add the frozen peas and heat through until just done and the peas are still bright green. If you are following a Paleo (the peas are iffy, but worth the minor cheat) diet enjoy as is with a green salad, if you are eating grains serve over rice. Enjoy

1 Tbs coconut oil
1/2 lb frozen, shelled, raw shrimp
1/2 lb frozen scallops
3 Tbs diced sweet onion
1 clove garlic, diced
1 can artichoke quartered artichoke hearts, rinsed
1 C frozen peas
1 C white wine or broth
Salt and pepper to taste
