The biggest barbecue day of the season is just around the corner. That’s right, I’m talking about the 4th of July. Watermelon, brats and burgers, and potato salad…….not always the healthiest fare. One swap will make this much healthier. Trading potato salad for sweet potato salad. There are lots of recipes for sweet potato salad out there, this is the one I make, and it is really, really good.
Sweet Potato Salad
3-4 sweet potatoes, cooked
2-4 TBS olive oil
2 green onions
1-2 chipotle peppers in abobo sauce, chopped
1 TBS adodo sauce
1/2 can diced green chilis
Salt and Pepper to taste
Roughly chop sweet potatoes, add olive oil, green onions,chipotle peppers, green chilis, adobo sauce, salt and pepper to taste and mix well. Serve hot or cold.
Serving suggestion. Place potato salad on plate and top with a fried egg…mmm mmm good.
